🥘 Ingredients
- cooked beet 1 small
- prepared hummus ½ cup
- egg 1 large
- panko bread crumbs ½ cup
- cornmeal ¼ cup
- Mexican Tajin Seasoning ½ tsp
- green tomatoes 4 slices
- vegetable oil ¼ cup
- vegetarian black bean burgers 4 ea
- Sargento Mild Cheddar Cheese 8 slices
- pretzel buns 4 ea
- eggs 4 med
- butter 1 tbsp
- microgreens ½ cup

Beet Hummus

1Place cooked beet in a food processor and process for 20 seconds or until smooth, scraping down sides after 10 seconds .

2Add prepared hummus and pulse 3-4 times until well blended.

3Transfer to a container and refrigerate until ready to assemble burgers.
Fried Green Tomatoes

1Pour egg into a shallow bowl or dish .

2Combine panko bread crumbs , cornmeal and Mexican Tajin Seasoning in another shallow dish.

3Dip 1 green tomatoes slice in beaten egg, then transfer to panko mixture. Coat both sides. Repeat with remaining tomato slices.

4Fry breaded tomato slices in vegetable oil in a large skillet over medium heat for 1-2 minutes or until golden brown.

5Turn and fry an additional 1-2 minutes .

6Drain on paper towels and keep warm until ready to assemble burgers.
Black Bean Burgers

1Grill vegetarian black bean burgers on grill over medium heat for 4-5 minutes per side or until heated through.

2Top each burger with 2 slices Sargento Mild Cheddar Cheese . Keep warm until ready to assemble.

3While burgers are cooking, toast pretzel buns on grill until lightly browned. Set aside.
Fried Eggs

1In a small non-stick skillet , fry eggs in a tablespoon of butter over medium heat for 3-4 minutes or until white is cooked through, but yolks are still soft.

2Transfer to a large plate , and keep warm until ready to assemble.
Assembly

1Transfer burgers to bun bottoms.

2Top each burger with a fried green tomato, a fried egg and microgreens .

3Spread prepared beet hummus on cut side of each toasted bun top. Place on top of burgers.

4Serve with sweet potato chips and pepper rings.
