π₯ Ingredients
- turkey
- carrots 2-3
- celery sticks 2
- onion 1
- garlic cloves 6
- thyme
- rosemary
- sage
- water
- olive oil
- butter

- roasting pan
- aluminium foil

This liquid base can be used in making a stock if you want!

1If you have the time, brine the turkey . Wet or dry brine, your call.

2Rough cut carrots , celery sticks , onion and add to roasting pan . Smash garlic cloves and add to pan with skins. Add aromatics as desired ( thyme , rosemary , sage ). Place rack in pan, and add water to just below the bottom of the rack.

3Spatchcock the turkey. Place it in the roasting pan.

4Rub the turkey with olive oil and sprinkle on sage and thyme. ( butter is a totally acceptable substitute for olive oil).

5Cover and seal the roasting pan with aluminium foil .

6Cook at 425F, 6 minutes per pound.

7Remove foil and check temperature at thickest part of thigh. Continue cooking uncovered at 375F until an internal temperature of 165F is reached.
