1Preheat oven to 350°F.

2Roll out the Single-Crust Pie Pastry and fit it into a 9-inch pie plate.

3Blind bake the crust (using pie weights) at 350°F for 20 minutes, then remove weights and bake for another 10 minutes until lightly browned.

4In a medium bowl , whisk together the large eggs , granulated sugar , light brown sugar , vanilla extract , melted unsalted butter , apple cider vinegar , honey , all-purpose flour , and kosher salt until smooth.

5Pour the filling into the pre-baked crust.

6Bake at 350°F for 30 minutes . The pie is done when the center is firm and doesn't jiggle when tapped.

7Let the pie cool completely to room temperature so the custard sets.

8Dust with powdered sugar before serving.
