  • flour 2 cups
  • salt ½ tsp
  • sugar 1 tsp
  • eggs 6 each
  • milk 2 ½ cups
  • butter

    Preheat the oven to 450°F Preheat popover pan in the oven In a large bowl sift the flour with the salt and sugar In a smaller bowl crack the eggs and mix well Add the milk to the eggs and beat until well mixed Add the liquid mixture to the dry Mix until incorporated. OK if there are still some lumps. Don't over mix Should be the texture of heavy cream Add small pads of butter to popover pan wells. Return to oven until better is melted. Remove before butter burns. (OK to use muffin pan if you don't have popover pan) Quickly when the hot pan is out of the oven pour the popover batter into the pan wells. Fill to just over 1/2 way. Pour down the middle so that the batter does not touch the edge of the wells.

    Return to oven and bake for 15 minutes at 450°F. Then turn down to 350°F and bake for another 15 minutes. Take out of the oven and cool. Eat while still warm.
