One-Bowl Buttermilk Birthday Cake with Cream Cheese Frosting

- all-purpose flour 1 ½ cups

- baking soda ½ tsp
- baking powder 1 ½ tsp
- sugar 1 cup
- neutral oil (such as grapeseed or avocado) ½ cups

- buttermilk ½ cup
- vanilla extract 2 tsp
- cake pans 2
- cream cheese 8 oz
- sugar ½ cups
- heavy cream 0.67 cups
- sea salt 1 pinch
- vanilla 1 tsp

1Preheat your oven to 350°F.

2In a large bowl, whisk together the all-purpose flour , salt , baking soda , baking powder , and sugar .

3Add the neutral oil (such as grapeseed or avocado) , lightly beaten eggs , buttermilk plus 2 tablespoons, and vanilla extract . Stir until just combined.

4Coat two 6-inch cake pans (or one 9-inch pan) with nonstick spray or butter. For best results, line the bottoms with parchment paper. Pour the batter evenly into the pans.

5Bake for 25 to 30 minutes , or until a toothpick inserted into the center comes out clean.

6Cool in the pans for 15 minutes , then invert onto a cooling rack to cool completely before frosting.

7To make the frosting, beat the cream cheese and sugar together until light and fluffy.

8Add the heavy cream , sea salt , and vanilla . Beat again until the mixture is thick, light, and fluffy.

9If using two 6-inch cakes, cut each cake in half crosswise to create four thin layers. Stack the layers, spreading frosting between each one. Use the remaining frosting to cover the top and sides of the cake. Decorate with sprinkles and candles as desired.
