Creamy Spiced Red Lentil & Cauliflower Dal

- dried red lentils 2 cups
- cauliflower 1 small head
- onion 1
- garlic 4 cloves
- fresh ginger 1 Tbsp
- diced tomatoes 1 can (14 oz)
- vegetable broth 4 cups
- curry powder 1 Tbsp
- turmeric 1 tsp
- ground cumin 1 tsp
- coriander Β½ tsp
- fresh
- lime

1Place dried red lentils (rinsed), cauliflower (chopped into florets), onion (diced), garlic (minced), fresh ginger (grated), diced tomatoes , vegetable broth , curry powder , turmeric , ground cumin , and coriander into the slow cooker. Stir to combine.

2Cover and cook on Low for 4 to 5 hours or High for 2 to 3 hours . The lentils should be completely disintegrated and the cauliflower tender.

3Stir vigorously to cream the lentils further.

4Stir in fresh cilantro and lime juice right before serving.
