Nigella Lawson's Chocolate Guinness Cake

- Guinness 250 ml
- unsalted butter 250 g
- unsweetened cocoa powder 75 g
- caster sugar 400 g
- sour cream 150 ml
- large eggs 2
- vanilla extract 1 tablespoon
- all-purpose flour 275 g
- baking soda 2 Β½ teaspoons
- cream cheese 300 g
- confectioners' sugar 150 g
- heavy cream 125 ml

1Preheat oven to 350Β°F (180Β°C). Butter and line a 9-inch springform pan with parchment paper .

2Pour the Guinness into a large wide saucepan , add the unsalted butter (sliced) and heat until the butter has melted.

3Whisk in the unsweetened cocoa powder and caster sugar .

4In a separate bowl , whisk the sour cream with the large eggs and vanilla extract , then pour into the beer-and-butter mixture.

5Whisk in the all-purpose flour and baking soda .

6Pour the cake batter into the prepared pan and bake for 45 minutes to 1 hour (until a skewer comes out clean).

7Leave to cool completely in the pan on a rack , as it is quite a damp cake.

8To make the frosting: Lightly whip the cream cheese (room temperature) until smooth, sift over the confectioners' sugar and then whisk them together.

9Add the heavy cream and whisk again until it reaches a spreadable consistency.

10Remove the cake from the pan and place on a platter . Ice the top of the cake so that it resembles the frothy head on a pint of Guinness.
