- lean beef fillet 300 grams
- soy sauce 1 ½ tbsp
- chinese wine 2 tsp
- oyster sauce 1 ½ tbsp
- white sugar 1 tsp
- cornflour 1 tsp
- sesame oil 1 tsp
- canola oil 1 tbsp
- canola oil 1 ½ tbsp
- bean sprouts 500 grams
- canola oil 1 tbsp
- minced garlic cloves 5
- rice noodles or kway teow 600 grams
- canola oil 3 ½ tbsp
- sliced ginger 4

1Slice lean beef fillet thinly against the grain.

2Mix beef with seasoning ingredients: soy sauce , chinese wine , oyster sauce , white sugar , and cornflour . Leave to marinate fro 20min, then add sesame oil and canola oil .

3Heat canola oil in wok . Stir fry bean sprouts until slightly limp, then set aside.

4Heat canola oil in wok . Saute minced garlic cloves until crispy and golden. Add rice noodles or kway teow and stir fry for 4 minutes until lightly browned. Set aside.

5Heat canola oil in wok . Add beef and remaining marinade and sliced ginger .

6Add noodles and bean sprouts, stir fry until everything is well coated.
