Tarte au citron
🥘 Ingredients
- lemons 4
- sugar 175 gr
- maïzena 1 table spoon
- eggs 4
- egg whites 3
- sugar 100 gr
- baking powder 1 tea spoon

Dough

1Prepare a [pâte brisée](./pate-brisee) or [sablée](./pate-sablee) and pre-bake it.
Lemon curd

You can also use limes if you like it more sour!

1Get the zest and juice of the lemons .

2Add the sugar , the maïzena , and heat gently.

3Add the eggs pre-beaten.

4Put on high heat and pour into the dough when the mixture starts to thicken.

5Bake the mixture in the dough until it finishes thickening at 160°C for 10 minutes .

6Let cool.
Meringue

1Beat the egg whites very dense, add the sugar and the baking powder and finish beating.

2Spread on the tart. Put in the oven at 160°C, until the meringue browns.

3Let cool.
