Tarte au citron

🥘 Ingredients

  • lemons 4
  • sugar 175 gr
  • maïzena 1 table spoon
  • eggs 4
  • egg whites 3
  • sugar 100 gr
  • baking powder 1 tea spoon

  • oven

Dough

    Prepare a [pâte brisée](./pate-brisee) or [sablée](./pate-sablee) and pre-bake it.

Lemon curd

You can also use limes if you like it more sour!

    Get the zest and juice of the lemons .

    Add the sugar , the maïzena , and heat gently.
  3. 3
    Add the eggs pre-beaten.
  4. 4
    Put on high heat and pour into the dough when the mixture starts to thicken.

    Bake the mixture in the dough until it finishes thickening at 160°C for 10 minutes .

    Let cool.

Meringue

    Beat the egg whites very dense, add the sugar and the baking powder and finish beating.
  2. 2
    Spread on the tart. Put in the oven at 160°C, until the meringue browns.
  3. 3
    Let cool.
