Lime ginger cheesecake
π₯ Ingredients
- ginger cookies 220 g
- butter 50 g
- ginger 20 g
- icing sugar 75 g
- lime 2

- springform cake tin

Add a lime glaze (if you really like lime) or passion fruit.

1Crumble the ginger cookies until you have a fine powder.

2Melt the butter and add it to the cookies.

3Add some grated ginger (easier if frozen) in case the cookies lack are not gingery enough.

4Mix and spread the mixture at the bottom of a springform cake tin .

5Mix the mascarpone{500%g}, the icing sugar , the zest and juice of the lime .

6Spread on top of the crushed cookies in the tin, being careful not to damage the bottom layer.

7Let it rest in the fridge for a while.
