  • carrot tops 1 bunch
  • basil leaves 30 leaves
  • walnuts 1 cup
  • parmesan ¼ cup
  • garlic 2 cloves
  • lemon ½ squeeze
  • salt ¼ tsp
  • pepper 0.12 tsp
  • olive oil ½ cup

    In a food processor, combine carrot tops , basil leaves , walnuts , parmesan , garlic , juice from half a lemon , salt , and pepper (reserving the olive oil for now). Pulse until roughly combined.

    Scrape down the sides of the processor, then blend again while slowly drizzling in olive oil until the pesto reaches your desired consistency. This versatile pesto works perfectly as a dip, spread, or topping for various dishes.
