Pistachio cookies with chocolate drizzle

  • coconut oil 3 tbsp
  • brown sugar ¼ cup
  • almond milk 2 tbsp
  • vanilla extract ½ tsp
  • pistachios 3 tbsp
  • dark chocolate 1 oz

    Preheat your oven to 350°F. In a bowl , whisk together all-purpose flour , baking powder , and salt . In a separate bowl , mix coconut oil with brown sugar , almond milk , and vanilla extract until well combined. Gradually mix the dry ingredients into the wet ingredients until a dough forms. Fold in pistachios . Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart. Bake for 11 minutes|12%minutes until edges are lightly set. Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a cooling rack to finish cooling.

    Melt dark chocolate in a microwave-safe bowl or double boiler until smooth, then drizzle over the cooled cookies. Let the chocolate set. Store the cookies in an airtight container at room temperature for 2 days|3%days .
