Arugula fennel salad with lemon honey dressing

🥘 Ingredients

  • parmigiano reggiano 0.33 cup
  • lemon zest 1 tbsp
  • lemon juice ½ cup
  • honey 1 ½ tbsp
  • dijon mustard 1 ½ tsp
  • salt ¼ tsp
  • olive oil 0.33 cup
  • olive oil 2 tbsp
  • arugula 5 oz
  • fennel 1 bulb
  • parmigiano reggiano 1 tbsp

    In a bowl, add parmigiano reggiano , lemon zest , lemon juice , honey , dijon mustard , salt , and olive oil plus olive oil . Whisk really well. Let it sit for 15 minutes|20%minutes .

    Shave the fennel and squeeze a bit of lemon so it doesn’t turn.

    Add the arugula and fennel to a bowl. Massage dressing in, as much or as little as you want.

    Shave more parmigiano reggiano on top.
