🥘 Ingredients
- parmigiano reggiano 0.33 cup
- lemon zest 1 tbsp
- lemon juice ½ cup
- honey 1 ½ tbsp
- dijon mustard 1 ½ tsp
- salt ¼ tsp
- olive oil 0.33 cup
- olive oil 2 tbsp
- arugula 5 oz
- fennel 1 bulb
- parmigiano reggiano 1 tbsp

1In a bowl, add parmigiano reggiano , lemon zest , lemon juice , honey , dijon mustard , salt , and olive oil plus olive oil . Whisk really well. Let it sit for 15 minutes|20%minutes .

2Shave the fennel and squeeze a bit of lemon so it doesn’t turn.

3Add the arugula and fennel to a bowl. Massage dressing in, as much or as little as you want.

4Shave more parmigiano reggiano on top.
