Egg Salad Sandwich

🥘 Ingredients

  • celery 2 hearts
  • onion or shallot ¼ cup
  • champagne vinegar 1 Tbsp
  • hard-boiled egg 8
  • Greek yogurt 2 Tbsp
  • yellow mustard 1 Tbsp
  • mayonnaise 1 Tbsp
  • dill 1 tsp
  • chives 1 tsp
  • salt ¼ tsp
  • pepper ¼ tsp

    Stir celery , onion or shallot and champagne vinegar together in a medium bowl ; let stand at room temperature until the onion is bright red, about 5 minutes .

    Add hard-boiled egg halves to the bowl; mash with a fork until finely crumbled. Add Greek yogurt , yellow mustard , mayonnaise , dill , chives , salt , and pepper ; stir until well combined. Garnish with additional dill and chives, if desired.
