Prep

1Preheat the oven to 425Β°F on the Bake setting.

2Start a pot of salted - water boiling for the pasta.
Roast the veggies

1Chop vegetables of choice (carrots, cauliflower, beets, etc - something sweet is good) into bite-size pieces to fill a baking tray.

2Add - salt , - pepper , and olive oil .

3Add to baking tray and cook for 25 minutes to 30 minutes , depending on the veggie you selected.
Cook the pasta

1When vegetables have 15 minutes remaining, start cooking your pasta . Reserve 1/2 cup pasta water when done cooking for pasta sauce.
Make the sauce

1Add butter and olive oil to pan over medium high heat.

2Add garlic and, optionally, ? sage to flavor the sauce. Cook for 1 minute to 2 minutes .

3Add some of the reserved pasta water, lemon juice, and lemon zest to the sauce.

4Add &pasta to the sauce.

5Add the roasted vegetables to the pasta.

6Serve, and top with ? fresh parsley .
