🥘 Ingredients

  • vegetable oil 1 tbsp
  • onions 1 ½ cups
  • salt ¼ tsp
  • garlic 2 cloves
  • udon noodles 2 packs
  • miso paste 1 ½ tbsp
  • soy sauce 1 tbsp
  • brown sugar ½ tbsp
  • water ¼ cup

    In a frying pan over medium heat, warm vegetable oil and add onions . Season with salt and, if using, garlic . Cook, stirring occasionally, until deeply caramelized, about 15 minutes .

    In a large pot , bring water to a boil and cook udon noodles until just tender, then drain and set aside. In a small bowl , whisk together miso paste , soy sauce , brown sugar , and water until smooth. Pour the sauce into the frying pan with the onions and add the noodles, tossing to coat and heat through, about 2 minutes .
