  • champagne vinegar 1 oz
  • simple syrup 1 oz
  • vermouth 10 oz
  • gin 35 oz
  • water 5 oz
  • black pepper 6-8 cracks
  • milk 12 oz
  • olive oil 3 drops

    Blend about cherry tomatoes with a good pinch of kosher salt until you yield 16 oz of tomato juice after straining. Add that tomato juice to a large bowl along with lemon juice , champagne vinegar , simple syrup , vermouth , gin , water , and black pepper .

    Slowly pour the tomatini into the milk in slow, circular motions.

    Let it sit at room temperature for 3 hours .

    Strain the cocktail through a damp coffee filter.

    To serve, pour it into a chilled glass over a cherry tomato. Garnish with olive oil .
