🥘 Ingredients
- salt ½ tsp
- pasta 4 oz
- olive oil 2 tbsp
- tofu 8 oz
- garlic 2 cloves
- cashews ¼ cup
- unsweetened almond milk 1 cup
- nutritional yeast 2 tbsp
- lemon juice 1 tbsp
- salt ¼ tsp
- black pepper ¼ tsp

- skillet

1Fill a large pot with water, add salt , and bring to a boil. Add pasta and cook until al dente, about 8 minutes . Drain and set aside.

2In a skillet over medium heat, add olive oil and swirl to coat. Add tofu cubes and cook until golden on all sides, about 6 minutes . Add garlic and sauté until fragrant, about 1 minute .

3In a blender or small pot, combine cashews with unsweetened almond milk and blend until smooth. Stir in nutritional yeast , lemon juice , salt , and black pepper to form the creamy sauce.

4Pour the creamy sauce into the skillet with the tofu and simmer briefly to thicken, about 2 minutes . Add the drained pasta and toss to coat, until everything is well combined and heated through, about 2 minutes .
