🥘 Ingredients
- chickpeas 1 cup
- salt ½ tsp
- smoked paprika ½ tsp
- olive oil 1 tbsp
- pasta 4 oz
- cashews 1 cup
- lemon juice 2 tbsp
- capers 1 tbsp
- caper brine 1 tbsp
- dijon mustard 2 tsp
- water ¾ cup
- garlic powder 1 tsp
- pepper ¼ tsp
- kale 2 cups
- vegan parmesan cheese ¼ cup

1Preheat your oven to 400°F. On a sheet pan , toss chickpeas with salt , smoked paprika , and olive oil . Roast in the oven for 15 minutes until crisp.

2Meanwhile, cook pasta in salted water until al dente, then drain.

3In a blender, blend all dressing ingredients until smooth: cashews , olive oil, lemon juice , capers , caper brine , dijon mustard , salt, water , garlic powder , and pepper until smooth.

4In a large bowl , toss kale , pasta, roasted chickpeas, and vegan parmesan cheese until evenly combined. Drizzle the dressing over and toss until the salad is well coated.

5Taste and adjust salt/pepper if needed, and serve immediately.
