🥘 Ingredients
- olive oil 1 Tbsp
- yellow onion 1 medium
- red bell pepper 1 medium
- garlic 3 cloves
- dry black eyed peas 1 ¼ cups
- vegetable broth 3 ½ cups
- bay leaves 2
- smoked paprika 2 tsp
- cayenne pepper ¼ tsp
- coconut aminos 2 Tbsp
- liquid smoke 1 tsp
- sea salt ½ tsp
- pepper ½ tsp
- collard greens 1 small bundle
- rice
- sweet potato
- cornbread

1Press “SAUTE” on the Instant Pot . Once hot, add olive oil and yellow onion (diced) and sauté for 4 minutes to 5 minutes , stirring occasionally, until onion is tender and translucent.

2Add red bell pepper (diced) and minced garlic and sauté for 1 minute , then press “CANCEL”.

3Add all remaining ingredients except collard greens: dry black eyed peas , vegetable broth , bay leaves , smoked paprika , cayenne pepper , coconut aminos , liquid smoke , sea salt and pepper . Stir to combine.

4Then top with collard greens (chopped), but don’t stir.

5Cover with lid, press “PRESSURE COOK”, and cook on high for 17 minutes . Allow to naturally release pressure for 15 minutes , then manually release any remaining pressure.

6Remove bay leaves and stir. Taste and adjust seasonings as needed.

7Serve on their own, over rice , baked/roasted sweet potato , or with cornbread .
