- olive oil 1 Tbsp
- sweet potato 1 large
- red onions 1
- soyrizo 1 12-oz pkg
- black beans 1 15-oz can
- cilantro Β½ bunch
- salt
- pepper
- avocado 1
- lime wedge 1

1Heat olive oil in a saute pan over medium-high heat. Add sweet potato and saute until tender.

2Add the diced red onions and continue to saute until they become translucent.

3Next, add the soyrizo and stir until lightly browned.

4Add the black beans and stir until heated through.

5Turn off the heat and fold in the cilantro .

6Season to taste with salt and pepper

7Garnish with avocado and lime wedge
