Goat Cheese Cranberry Ice Cream

🥘 Ingredients

  • cranberries 120 g
  • sugar 30 g
  • salt ¼ tsp
  • orange juice 1 orange
  • orange zest 1 orange
  • fruit liqueur 1 tsp
  • 10%-cream 350 ml
  • chevre 225 g
  • sugar 90 g
  • salt ½ tsp
  • lemon zest 1 lemon

    Combine cranberries , sugar , salt , orange juice in a pan. Heat up on low heat until the berries have softened and there's a jam-like consistency. Transfer to a mixer and blend until smooth, then pass through a strainer. Stir in orange zest and fruit liqueur until combined. Then chill until cool.

    Clean out blender.

    Now place 10%-cream , chevre , sugar , salt , and lemon zest in the blender and blend until smooth. Chill until very cold.

    When cold, churn according to ice cream maker instructions then fold in the cranberry swirl when placing into a container for freezing.

    Let rest in freezer for 12 hours.
