- rice vinegar 3 tbsp
- sugar 1 ½ tbsp
- soy sauce ¼ tsp
- sesame seeds 1 tsp

1Thinly slice cucumber Place into a bowl . Sprinkle with salt , mix well, and let sit for 5 minutes . Then gently squeeze out excess moisture. In a separate bowl, mix rice vinegar , sugar , and soy sauce until dissolved. Combine cucumbers with dressing. Chill if desired.

2Garnish with sesame seeds before serving. Optionally, top with seaweed or crab or shrimp if using.
