    Add drained ricotta ; either Drain over night OR Spread over a few layers of paper towels and sandwich between a several more paper towel and press firmly Put cheese in a bowl and add egg and mix well Slowly add flour tipo 00 to the mixture also Add pecorino to the mixture Once it comes together knead it until softens and not sticky Create a ball and let rest 10 minutes Make gnocchi
