1If using wooden skewers, soak them in water for a few hours before grilling.

2Cut chicken thighs into roughly 1-inch pieces. In a bowl, add the chopped chicken, olive oil , salt , garlic cloves , oregano , black pepper , dijon mustard , zest of lemon , and juice of a lemon . Mix well. Cover and refrigerate to marinate for at least 30 minutes and up to 24 hours . Preheat a grill to 285Β°C. Thread the marinated chicken onto skewers. Grill the chicken skewers for 12-15 minutes , turning occasionally, until well charred on all sides.
