- potato 3 cups, sliced
- leek 3 cups, sliced, white part only
- chicken stock 6 cups
- unsweetened whipping cream 1/2-1 cup
- salt
- pepper
- chopped chives 1 pinch
- green onion tops 1 pinch

- blender
- food processor
- soup cups

1Simmer potato and leek in chicken stock until tender.

2Cool and puree in blender or food processor .

3Stir in unsweetened whipping cream .

4Season with salt and pepper to taste. Over salt slightly as salt loses flavour when cold.

5Chill. Serve in chilled soup cups and garnish with chopped chives and/or green onion tops .
