  • potato 3 cups, sliced
  • leek 3 cups, sliced, white part only
  • chicken stock 6 cups
  • unsweetened whipping cream 1/2-1 cup
  • salt
  • pepper
  • chopped chives 1 pinch
  • green onion tops 1 pinch

🍳 Cookware

  • blender
  • food processor
  • soup cups

    Simmer potato and leek in chicken stock until tender.

    Cool and puree in blender or food processor .
  3. 3
    Stir in unsweetened whipping cream .
  4. 4
    Season with salt and pepper to taste. Over salt slightly as salt loses flavour when cold.

    Chill. Serve in chilled soup cups and garnish with chopped chives and/or green onion tops .
