🥘 Ingredients
- guajillo chiles 4
- ancho chiles 2
- garlic cloves 6
- white onion 1 chopped
- apple cider vinegar 1/4 cup
- cumin 1 tbsp
- oregano 1 tbsp
- beef roast 5 lb
- beef broth 2 cups
- cinnamon stick 1
- whole cloves 4
- black peppercorns 6
- bay leaf 2

1Toast guajillo chiles and ancho chiles in dry pan over medium heat for 2 minutes . Soak toasted chiles in hot water for 10 minutes .

2Blend soaked chiles with garlic cloves , white onion , apple cider vinegar , cumin , and oregano until smooth.

3Set instant pot to sauté. Sear beef roast until browned.

4Pour blended chile sauce into instant pot. Add beef broth , cinnamon stick , whole cloves , black peppercorns , and bay leaf .

5Pressure cook beef on high for 75 minutes . Allow natural pressure release for 15 minutes .

6Shred beef and reserve consommé.
