Chicken Piccata

  • chicken breasts 2 whole
  • salt 1 dash
  • pepper
  • white flour ΒΌ cup
  • butter 3 tbsp
  • butter 1 tbsp
  • fresh mushrooms 1 cup
  • minced garlic 1 clove
  • white wine ΒΌ cup
  • chicken broth
  • lemon juice 2 tbsp
  • chopped parsley 2 tbsp

  • plastic wrap
  • large skillet

    Place chicken breasts , boneless, skinless, halved lengthwise between 2 pieces of plastic wrap . Sprinkle chicken with salt or pepper ; coat with white flour .

    In a large skillet , brown chicken in butter over medium heat about 5 minutes or till lightly golden. Remove from skillet and keep warm. Add remaining butter to the skillet and cook the fresh mushrooms , sliced and minced garlic till tender. Return chicken to pan; add white wine or chicken broth and lemon juice . Simmer for 8 minutes , stirring occasionally, till sauce slightly thickens.
