Chicken Piccata
A delicious chicken dish with a lemon butter sauce, mushrooms and parsley

- chicken breasts 2 whole
- salt 1 dash
- pepper
- white flour ΒΌ cup
- butter 3 tbsp
- butter 1 tbsp
- fresh mushrooms 1 cup
- minced garlic 1 clove
- white wine ΒΌ cup
- chicken broth
- lemon juice 2 tbsp
- chopped parsley 2 tbsp

- plastic wrap
- large skillet

1Place chicken breasts , boneless, skinless, halved lengthwise between 2 pieces of plastic wrap . Sprinkle chicken with salt or pepper ; coat with white flour .

2In a large skillet , brown chicken in butter over medium heat about 5 minutes or till lightly golden. Remove from skillet and keep warm. Add remaining butter to the skillet and cook the fresh mushrooms , sliced and minced garlic till tender. Return chicken to pan; add white wine or chicken broth and lemon juice . Simmer for 8 minutes , stirring occasionally, till sauce slightly thickens.
