- beef sirloin tip roast 3 to 4 pounds
- all purpose flour 2 tablespoons
- shortening 2 tablespoons
- salt 2 teaspoons
- pepper ¼ teaspoons
- onion 1 medium
- bay leaves 2
- clove garlic minced 1
- hot water ½ cup
- small onions peeled 8
- medium carrots pared 8
- small potatoes pared 8
- salt 1 ½ teaspoons

1Sprinkle one beef sirloin tip roast lightly with all purpose flour and rub in.

2In Dutch oven , brown slowly on all sides in shortening .

3Season with salt and pepper .

4Add onion sliced, bay leaves , clove garlic minced , and hot water .

5Cover and cook in moderate oven at 350 degrees F about 2 hours or until meat is almost tender.

6Add small onions peeled , medium carrots pared , and small potatoes pared .

7Sprinkle vegetables with salt .

8Cover and cook 1 ½ hours or until meat and vegetables are tender.
