- chicken breast 2 lbs
- pasta 1/2 lbs
- carrots 3 large, diced
- yellow onion 1 diced
- celery 4 stalks, diced
- garlic 1 head minced
- tomato paste 6 T
- sun dried tomatoes 1/2 cup
- water 6-8 cups
- boullion 6-8 t
- dried parsley 1/2 t
- dried basil 1/2 t
- italian seasoning 1 t
- dried oregano 1/2 t
- red pepper flakes 1/2 t
- pepper
- heavy cream 1 cup
- spinach
- parmesan

1Pan fry the chicken breast .

2Cook the pasta .

3In a large pot, sautee the carrots , yellow onion , celery followed by the garlic .

4Once the vegetables are mostly soft, add the tomato paste , and sun dried tomatoes .

5Cover with water and boullion and let simmer.

6Add dried parsley , dried basil , italian seasoning , dried oregano , red pepper flakes , and pepper .

7Finish with the heavy cream , spinach , cooked pasta, and diced chicken.

8Serve with fresh grated parmesan .
