Carrot Rice

  • medium carrot 1
  • onion Β½
  • olive oil
  • salt
  • rice 1 cup
  • bouillon 1 t
  • water 1.5 cup

    Grate the medium carrot followed by the onion . Soften in a small pot with olive oil and salt .

    Once the carrot and onion are soft, add the rinsed rice and toast for a few minutes.

    Add the bouillon and water and a bit more salt.

    Bring to a boil and taste to adjust the salt.
  5. 5
    Once boiling, cover the pot with aluminum foil followed by the lid and cook on low heat for 15 minutes .
