- chicken breast about 1 pound
- carrot 1 large
- broccoli some
- bell pepper 1
- onion 1/2 large
- garlic 3-4 large cloves
- thai chilies 1-2
- wide rice noodles about 10 oz
- oyster sauce 4-5 T
- soy sauce 3-4 T
- water 1 T
- brown sugar 4-5 t
- high heat oil plenty
- fish sauce 2 t
- green onions

- wok or large pan

1Chop the chicken breast into bite size pieces.

2Chop the carrot , broccoli , bell pepper , and onion into large, squarish, bite-size pieces.

3Very finely chop the garlic and thai chilies .

4Prepare the wide rice noodles per the package instructions.

5To make the sauce, combine oyster sauce , soy sauce , water , and brown sugar .

6In a wok or large pan , sautee the broccoli, carrot, and bell pepper. Remove once slightly softened.

7Now, heat the pan to high with high heat oil .

8Add the garlic and chilies and fry for 10 seconds.

9Add the onions and fry for about a minute.

10Add the chicken and fish sauce and fry until the chicken is mostly cooked.

11Add the rest of the veggies and fry until the chicken is cooked.

12Add the noodles and sauce and toss until combined.

13Immediately plate, top with finely chopped green onions , and serve. Enjoy!
