- flour 750 grams
- salt 2 teaspoon
- yeast 7 grams
- sugar 3 teaspoons
- water 450 grams
- salt 2 teaspoon
- bicarbonate 2 teaspoon
- egg 1
- sesame
- poppy

1In a large bowl combine flour and salt .

2Dissolve yeast and sugar in luke warm water .

3Make a well in the middle of the dry ingredients and pour in the yeast mixture.

4Either by hand or with a dough hook, knead until smooth and elastic.

5Move dough to clean, lightly oiled bowl and cover with tea towel.

6Prove until doubled in size.

7Pre-heat oven to 200C and bring a wide pan of water to the boil.

8Add salt and bicarbonate to the water.

9Divide the dough into 12 equal portions and roll into dough balls.

10βThumbβ each ball to create bagel shape by poking a hole in the middle with your thumb and stretching.

11Boil each bagel for 1 minute per side and place on a baking tray.

12Thoroughly coat each bagel with egg and sprinkle with your choice of seeds (i.e., sesame and poppy ).

13Bake for 20 minutes or until golden brown.
