π₯ Ingredients
- potatoes 3
- egg 2
- flour 1/2 cup
- salt 1 tsp
- olive oil 2 tbsp

- potato ricer

1Bake potatoes (unpeeled) at 175C for 1 Β½ hours until tender.

2Remove from oven, cut in half, and allow to cool until they can be handled.

3Scoop out the flesh and pass through a potato ricer .

4Flatten into a rectangle, and allow to cool to room temperature.

5Add egg , flour and salt .

6With a dough scraper, fold the dough into itself adding more flour as necessary. Avoid kneading the dough, it should be light and fluffy.

7Divide the dough into 8 pieces.

8Roll each piece into a long rope, 1cm in diameter.

9Cut the rope into 1cm pieces.

10Roll each piece over the back of a fork to create ridges.

11Boil in salted water until they float to the surface.

12Optioanlly - fry in olive oil until golden brown.

13Serve with your favourite sauce.
