- lamb leg steaks 500g, cubed
- potatoes 2 large, cubed

2Step 1: Blooming whole spices Heat oil in heavy pot over medium-high heat.

3Add whole cumin seeds , whole coriander seeds , black mustard seeds , curry leaves , bay leaf , cardamom pods , cinnamon stick , cloves and let sizzle for 30 seconds until fragrant.

4Step 2: Base Add onion and cook for 8-10 minutes until golden. Add garlic paste and ginger paste if using, cook for 1 minute .

5Step 3: Ground spices Add ground turmeric , ground cumin , ground coriander , guajillo chili , ancho chili , chipotle chili , de arbol chili , black pepper . Stir and cook spices for 1 minute .

6Step 4: Main ingredients Add lamb leg steaks and brown well for 5-7 minutes . Add potatoes . Add water or enough to cover.

7Step 5: Cooking Bring to boil, then reduce heat and simmer for 1-1.5 hours until lamb is tender and potatoes are cooked. Season with salt to taste. Finish with fresh coriander .
