- cauliflower 1 head
- olive oil 2 tablespoons
- salt 1 teaspoon
- cumin 1 teaspoon
- turmeric ½ teaspoon
- pepper ½ teaspoon
- chili powder 1 teaspoon
- red cabbage ½ head
- red bell pepper 1
- cilantro 1 bunch
- frozen edamame 1 bag
- black beans ½ can
- olive oil 3 tablespoons
- lime juice 2 tablespoons
- salt 1 teaspoon
- pepper ½ teaspoon

1Preheat the oven to 400 degrees

2Break cauliflower into bite size pieces and place in a mixing bowl . Add olive oil and season with salt , cumin , turmeric , pepper , and chili powder . Mix all well.

3Spread the cauliflower out on a greased baking sheet , optionally on top of parchment paper (this makes cleanup easier). Bake for 15 minutes.

4While the cauliflower cooks, chop red cabbage (I like to shred it with a potato peeler), red bell pepper , and cilantro . Add to a mixing bowl.

5Thaw and shell frozen edamame according to package instructions. Add them to the mixing bowl along with black beans , drained and rinsed.

6Season the slaw with olive oil and lime juice . Add salt and pepper and mix everything well.

7By now the cauliflower should be done baking

8Serve the cauliflower in bowls and serve topped with the red cabbage slaw mixture!
