- breadcrumbs ½ cup
- milk ½ cup
- large eggs 2
- yellow onion ½
- garlic 3 cloves
- salt 1 teaspoon
- pepper ½ teaspoon
- butter 3 tablespoons
- chopped yellow onion 1
- sliced mushrooms 1 pack
- flour 2 tablespoons
- beef broth 2 cups
- spinach 1 cup
- sour cream 0.67 cup
- dijon mustard 1 tablespoon
- egg noodles ½ pound
- green onion

1preheat the over to 450 degrees

2combine beef , breadcrumbs , milk , large eggs , yellow onion , garlic , salt , and pepper .

3form into tablespoon size meatballs, and place on a baking sheet . Bake for 12 to 15 minutes.

4Meanwhile, melt butter over medium heat. Add chopped yellow onion , sautee for about a minute, and then add sliced mushrooms . Cook until the mushrooms are golden.

5Add flour , and stir to incorporate. Add half of the beef broth . Once incorporated, add the rest. Add in spinach and stir until wilted.

6Stir in sour cream and dijon mustard . Bring to a simmer, and then bring down to medium low. Allow to cook until it thickens

7Serve over egg noodles and top with sliced green onion
