- diced onion ¼ cup
- diced celery ¼ cup
- flour ½ oz
- okra ½ cup
- vegetable stock 8 cups
- gumbo filé ½ Tbsp
- diced tomatoes ½ cup
- cayenne (or less) ½ Tbsp
- white pepper ½ tsp
- cooked rice 1 ½ cups
- salt
- pepper

- large soup pot

1In a large soup pot , melt unsalted butter .

2Add diced onion and diced celery ; sauté until tender.

3Add flour to make a roux. Cook for 3 minutes .

4Add okra , vegetable stock , gumbo filé , diced tomatoes , cayenne (or less) , white pepper , cooked rice , and salt and pepper to taste and bring to a boil.

5Simmer for 15 minutes .
