  • zucchini 1 cup
  • tomato 1 large
  • onion 1 medium
  • Parmesan cheese 0.33 cup
  • reduced-fat Bisquick ½ cup
  • fat-free milk 1 cup
  • egg substitute ½ cup
  • salt
  • pepper

  • 9-inch pie plate

    Heat oven to 400°F.

    Grease a 9-inch pie plate .

    Layer chopped zucchini , chopped tomato , onion , and Parmesan cheese . Stir reduced-fat Bisquick , fat-free milk , egg substitute , salt and pepper to taste until blended, then pour into pie plate.

    Bake for 35 minutes .
