1Rinse quinoa thoroughly and add to pot with 2:1 ratio of water to quinoa. Bring to a boil, then simmer until water is absorbed. Turn off the heat, let stand for 5 minutes and fluff.

2Rinse brown lentils and add to pot with 2:1 ratio of water to lentils. Bring to a boil, then simmer for 15 minutes or until desired softness. Turn off the heat and set aside.

3Roughly chop kale , dice plum tomatoes , parsley , large cucumber , red bell pepper .

4In a bowl , add the juice of a lemon , olive oil , white wine vinegar , salt , pepper , and a dash of cumin . Dressing and seasonings can be adjusted to taste.

5Combine the rest of the ingredients and let chill in the fridge.
