🥘 Ingredients
- olive oil 1 Tbsp
- onion 1 medium
- carrots 2 medium
- garlic 5 cloves
- vegetable stock 6 cups
- red lentils 1 ½ cups
- corn 0.67 cup
- cumin 2 tsp
- curry 1 tsp
- saffron 1 pinch
- cayenne 1 pinch
- salt
- pepper
- zest and juice 1 lemon
🍳 Cookware
- large pot
- immersion blender

1Heat olive oil in a large pot . Sauté chopped onion and diced carrots for 5 minutes .

2Add minced garlic and sauté for 1 minute more.

3Stir in vegetable stock , dried red lentils , corn , cumin , curry , saffron , cayenne , salt and pepper .

4Bring to a boil then simmer for 15 minutes .

5Blend with immersion blender and add zest and juice of 1 lemon.
