  • broccoli 1
  • onion 1
  • garlic 4 cloves
  • olive oil
  • salt
  • pepper
  • fresh basil 1 handful
  • fresh parsley 1 handful
  • spinach 1 cup
  • oat milk ΒΎ cup
  • lemon 1 tbsp
  • rigatoni pasta 250 g
  • pine nuts

🍳 Cookware

  • large saucepan
  • blender
  • large bowl

    Chop the broccoli including the stalk into small even sized pieces.

    Chop onion and garlic .
  3. 3
    Place a large saucepan over a medium heat and add a some olive oil . When the pan is hot add the broccoli, onion & garlic with some salt and pepper . SautΓ© for 5 minutes.

    Add broccoli mixture to blender with the fresh basil , fresh parsley , spinach , oat milk and lemon . Blitz until smooth & creamy.

    Combine sauce with cooked rigatoni pasta in a large bowl .

    Serve with toasted pine nuts .
