- garlic 4 cloves

- fresh basil 1 handful
- fresh parsley 1 handful
- spinach 1 cup
- oat milk ΒΎ cup
- lemon 1 tbsp
- rigatoni pasta 250 g
- pine nuts

- large saucepan
- blender
- large bowl

1Chop the broccoli including the stalk into small even sized pieces.

2Chop onion and garlic .

3Place a large saucepan over a medium heat and add a some olive oil . When the pan is hot add the broccoli, onion & garlic with some salt and pepper . SautΓ© for 5 minutes.

4Add broccoli mixture to blender with the fresh basil , fresh parsley , spinach , oat milk and lemon . Blitz until smooth & creamy.

5Combine sauce with cooked rigatoni pasta in a large bowl .

6Serve with toasted pine nuts .
