- confectioners' sugar 300 g
- water 300 g
- mint
- strawberries 500 g
- lime juice Β½
- vanilla 1 tsp
- egg 1

1Make a simple syrup by combining equal amounts of confectioners' sugar and water in sauce pan . Bring the mixture to a boil until the sugar is dissolved.

2Pour mixture into a container with a few leaves of mint and let cool.

3Add strawberries to a blender with a lime juice of half a lime and blend.

4Pour the puree through a strainer to remove the pulp.

5Add vanilla to the puree.

6Remove the mint leaves from simple syrup.

7Add the simple syrup to the puree a little at a time.

8Add a clean uncooked egg to the mixture and keep adding the simple syrup until the egg floats and the exposed part of the egg is about the size of a quarter.

9Make the sorbet the same way as making ice cream using a food processor .
