- sweet potatoes 3 large
- olive oil 3 Tbsp
- maple syrup 3 Tbsp
- Traditional Tunisian Harissa 2 Tbsp
- salt 2 tsp
- garlic 4 cloves
- TJ's sweet & spicy pecans Β½ cup

- mandoline or sharp knife
- large bowl
- 10-inch pan
- foil

1Preheat the oven to 400Β°F.

2Wash sweet potatoes . Do not peel; leave skins on.

3Using a mandoline or sharp knife , thinly slice the potatoes and set aside.

4Add olive oil , maple syrup , Traditional Tunisian Harissa , and salt to a large bowl and mix until combined.

5Add potatoes to the bowl and toss until evenly coated in the mixture.

6In a 10-inch pan arrange potato slices upright and in a row. Repeat with the remaining empty space in the middle of the pan.

7Peel and slice the garlic and nestle between potato slices, evenly distributed throughout.

8Cover with foil and bake for 30 minutes .

9While baking, chop the TJ's sweet & spicy pecans . At the 30 minute mark, remove foil and sprinkle pecans over potatoes.

10Bake an additional 20 minutes , uncovered.

11Serve warm and enjoy!
