Beach Day Chickpea Salad

  • raisins ΒΌ cup
  • chickpeas, drained 1 can
  • celery stalks, diced 2
  • chopped parsley 2 Tbsp
  • whole grain mustard 2 Tbsp
  • lemon juice 2 Tbsp
  • olive oil 2 Tbsp
  • salt
  • pepper

    Soak the raisins in warm water for 5 minutes to soften, then drain.

    Coarsely chop the raisins and add them to the chickpeas, drained .
  3. 3
    Add celery stalks, diced , chopped parsley , whole grain mustard , lemon juice , olive oil , and salt and pepper to taste, and stir well to combine.
