1Combine 2 cups packed fresh cilantro ; 2/3 cup toasted pepitas ; 1/2 cup crumbled Cotija or feta cheese ; 1/2 cup canola oil ; 1 small jalapeño chile , seeded if desired; 2 Tbsp lime juice ; 1 clove garlic , halved; and 1/4 tsp kosher salt and pepper in a food processor .
