Lemon Arugula Pesto

🥘 Ingredients

  • arugula 2 cups
  • Parmesan ¾ cup
  • hopped toasted walnuts 0.67 cup
  • basil ½ cup
  • olive oil ½ cup
  • garlic 3 cloves
  • lemon zest 1 tsp
  • lemon juice 2 Tbsp
  • salt ¼ tsp

    Combine 2 cups packed fresh arugula ; 3/4 cup shredded Parmesan cheese; 2/3 cup hopped toasted walnuts ; 1/2 cup packed fresh basil ; 1/2 cup extra virgin olive oil ; 3 cloves garlic , halved; 1 tsp lemon zest ; 2 Tbsp lemon juice ; and 1/4 tsp kosher salt in a food processor .

    Process until nearly smooth. Add up to 2 Tbsp additional olive oil to reach desired consistency.
