- ginger 1 tsp
- red curry paste 2 Tbsp
- pumpkin puree 1 cup
- coconut milk 1 15-oz can

1Heat the olive oil in a large skillet over medium heat.

2Once the oil is hot, add diced yellow onion , garlic , and ginger to the pan.

3Cook the aromatics until the onion is translucent, about 5 minutes .

4Add the red curry paste , pumpkin puree , coconut milk , pepper , and salt to the pan and stir well. Bring the curry sauce to a simmer and cook for 15 minutes .
