- garlic ½ tsp
- egg yolk 1
- salt ¾ tsp
- pepper ¼ tsp
- olive oil ½ cup

1In a small bowl (or large measuring cup), whisk together the Champagne vinegar , Dijon mustard , garlic , egg yolk , salt , pepper .

2While whisking, slowly add the olive oil until the vinaigrette is emulsified. Toss the greens with enough dressing to moisten and serve immediately.
