- olive oil 1 glug
- red onion 1
- red pepper 1
- garlic 2 cloves
- veggie Italian sausage 5
- smoked paprika 1 tsp
- uncooked rice 200 g
- white wine 3 oz
- vegetable stock 2 cups
- scallions 4
- tomato 1
- parsley 1 small bunch

- Dutch oven

1Add glug of olive oil to a heated Dutch oven . Fry sliced red onion for 5 minutes until soft.

2Add the red pepper and garlic and cook for 2 minutes . Crumble in veggie Italian sausage and cook for 5 minutes .

3Add smoked paprika and season. Add uncooked rice and mix well.

4Deglaze by pouring the white wine and scraping bits off the bottom of the pan.

5Add vegetable stock and bring to a simmer.

6Cook gently for 15 to 20 minutes until the rice is tender and the liquid is almost entirely absorbed.

7Remove from heat and gently fold in the chopped scallions , tomato , and parsley .
